This was my first shot at Sesame Seared Tuna, and I must say it was mighty successful. Thanks to a good friend of mine, I was gifted a few pounds of sushi grade tuna to do as I wished with it.
The sesame seeds are seasoned and flavored with cumin, sea salt, coriander, and black pepper.
I got the pan screaming hot, then placed the seeded tuna block in the pan with just a bit of hot oil. Each side was seared for maybe 20 seconds at a time.
It was paired with an Oregon Riesling and a potent wasabi/soy sauce combination.
